Slow Roasted Plum Tomatoes

- As many plum tomatoes as you like
- Olive oil
- herbs de provence
- salt & freshly ground pepper

- Preheat oven to 200

- slice tomatoes in half and place cut side up on a baking sheet lined with tin foil

- drizzle with olive oil, herbs de provence, salt and pepper

- roast in oven overnight or about 8 hours
