(Early) Christmas Eve Menu

Stanislaw Christmas Eve has been moved to the 22nd this year! My sister-in-law and her family weren't going to be with us on the 24th so we're celebrating a few days early all together. 

Given the non-traditional timing of the celebration, we decided this year to go with a non-traditional (for us) menu. A Mexican inspired feast featuring recipes from Mod Mex: Cooking Vibrant Fiesta Flavors at Home by chef Scott Linquist, a couple Rick Bayless recipes, and a few home-brewed ideas. 

We started prepping Thursday and had a major cooking session last night. We're heading out with bags and food in tow in a couple of hours to finish, assemble, and enjoy. Recipes to follow after the holiday!

Green Beans in a Black Bean Dressing


8 oz green beans, trimmed and sliced in half
1 Tbsp black bean paste
3 Tbsp oil
2 tsp sake
1/2 tsp sambal
a squeeze of lime

- Steam the beans until they are bright green. Remove from heat and run under cool water to stop cooking.
- Whisk together the rest of the ingredients
- Combine beans and sauce in a bowl and serve

Tomato Ceviche, Nobu Style

This is the best tomato salad I may have eaten. Ever. We tweaked the recipe for the ceviche sauce, omitting the salt & pepper it called for, improvising a yuzu sauce we didn't have, and subsituting sambal for aji amarillo paste. This recipe will amaze you. I plan on eating it plenty until we are out of heirloom tomatoes for the season!



TOMATO CEVICHE, NOBU STYLE

1/4 red onion, thinly sliced
3 heirloom tomatoes, various colors and sizes, chopped
4 teaspoons cilantro leaves
1/4 cup Ceviche Sauce (see below for recipe)

- Combine the tomatoes and cilantro in a bowl
- Toss gently with the Ceviche Sauce

Ceviche Sauce
Juice of 1/2 lemon
Juice of 1/2 lime
Juice of 1/2 small orange
1 tsp soy sauce
1/2 teaspoon grated garlic
1/2 teaspoon grated ginger
1 teaspoon sambal

- combine all of the ingredients

Sweet corn risotto, scallop and shrimp skewers, Eric Ripert's arugula and yogurt salad


This plate of food epitomizes dinner in August to me. A corn risotto topped with a chopped tomato and basil salad, skewers of bay scallops and shrimp spiced with a creole seasoning, and a refreshing arugula salad with yogurt dressing.

The salad is from Eric Ripert's amazing cookbook A Return to Cooking. It almost works as a palate cleanser with the meal and is a perfect accompaniment to the creamy risotto and seafood. His recipe calls for goat's milk yogurt, chives and pine nuts. I omitted the pine nuts and chives and used regular yogurt and it still was delicious.

ARUGULA SALAD WITH YOGURT DRESSING

1/2 cup yogurt
1 tsp minced shallot
1/4 tsp minced garlic
Sea salt and fresh ground pepper
2 large bunches arugula

- In a small bowl whisk together the yogurt, shallot, garlic, salt and pepper. Cover and refrigerate.

- To serve, place arugula in a bowl, and just enough dressing to lightly coat the arugula and toss.

Mozzarella & Tomato Salad


There are a million variations on this salad. And really, who needs a recipe? Fresh tomatoes, mozzarella, basil you've grown, olive oil, salt and pepper and you're done!

I was intrigued by this variation that I saw on Lottie & Doof that called for marinating the mozzarella as well as a couple of surprises, particularly the fennel seeds which were a great touch!I didn't use fresh buffalo mozzarella, we had a package of mozzarella balls on hand, but some fresh farmer's market cherry tomatoes and this dish was a hit.

1/2 tsp fennel seeds, lightly toasted and crushed
Zest of 1/2 a lemon
15 basil leaves, sliced
2 tsp chopped fresh oregano
4 tsp extra virgin olive oil
8 oz mozzarella
A handful or so of cherry tomatoes, larger ones sliced in half
Salt & freshly ground black pepper

-In a bowl combine the fennel, lemon zest, basil, oregano and olive oil. Toss in the mozzarella and marinate in the refridgerator at least 30 minutes.

-Before serving, stir in the tomatoes and season with a little salt and pepper.

Beet and Lentil Salad

This salad was taken from Gordon Ramsey's Cooking for Friends. A perfect summer lunch incorporating roasted red and thinly shaved raw chioggia beets which are simply beautiful.



MARINATED BEETS 
1 Chiogga beet

2-3 Tbsp Olive oil
2-3 Tbsp Sherry vinegar
1 Tbsp shallot, minced
Salt and pepper

- Peel the chioggia beet and using a mandoline, slice into very thin slices.

- Combine the rest of the ingredients and pour over the beets. Let marinate in the fridge for at least 20 minutes

FOR THE SALAD - serves 2

Cooked lentils (I cook a large-ish batch and then use throughout the week)
Mixed greens - spring greens, arugula, mizuna etc.
4 Roasted red beets
Marinated Beet
1-2 ounces of a firm sheep's cheese, diced (I used Carr Valley's Mobay Cheese, which is a goat & sheep blend)

- Cut the roasted beets into quarters if small, cut down further if large

- On each plate spread 2 heaping Tbsp of lentils, 1/2 the roasted beets and 1/2 the cheese. Top with a handful of the greens and 1/2 of the marinated beets.

- Drizzle the marinade on the greens and around the plate.

Grilled Keftas with Yogurt-Tahini Sauce and a Cucumber, Tomato, Feta Salad

We were craving middle eastern last night and decided to revisit a recipe for grilled keftas (ground lamb skewers) and try out a yogurt-tahini sauce to bring to our friends' house for dinner. I threw together a quick tomato, cucumber, feta salad and served everything with pita, carmelized red onions and sauted yellow peppers. The keftas are an old favorite, the yogurt tahini sauce a new favorite, every bit of it was sopped up with pita!

Radish Salad

Jason put together a new batch of lemon confit which is ready to try out. I went for a nice long, cool run this morning on the lake front and stopped by the Green City Farmer's Market afterward. To my delight they had icicle radishes (I haven't had any yet this season).

I was feeling a little peckish and wanted a late afternoon snack. I took a look around and decided to thrown together:

several radishes
1/2 minced confited lemon
1/2 oz feta

The radish and lemon confit on their own didn't exactly work, but with the feta it was delicious. I'm going to have to think of some mediterranean style feta and lemon confit combinations to try out!

Sauteed Beet Greens


We have beautiful little beets coming up in the corner farm and I brought home a handful the other day after watering. The greens were so beautiful and are usually overlooked as an edible part of the plant. Immediately after getting home I cut the greens of the beets and store them in a separate plastic bag in the crisper. They can be sauteed just like any other green and make for a delicious side. I usually discard part of the stems if they are especially long, but like to leave some stem for a little crunch.

SAUTEED BEET GREENS

- beet greens
- oil
- 1-2 cloves garlic
- pinch red pepper flakes
- salt

-Heat oil in a pan, add the garlic and red pepper flakes and saute until they just start to sizzle

-Add the beet greens and cook until wilted

-Finish with a dash of salt and serve!

Basmati Rice Salad with Asparagus and Leek

We wanted a side dish for our delicious burgers and I decided to raid the fridge and come up with something. Left over basmati rice from our Charlie Trotter cooking extravaganza the night before (more on that later), 6 spears of steamed asparagus and a leek and dinner was ready!

BASMATI RICE SALAD WITH ASPARGUS AND LEEK

2-3 cups cooked basmati rice
6 spears steamed asparagus, cut on the bias into 1 inch pieces
1 leek, white and light green parts, split, cleaned well and cut into half moons
olive oil
salt and pepper

- In a sauce pan heat the oil on low and saute the leek until soft

- In a large bowl combine the rice, asparagus and leeks

- Toss with dressing and serve room temperature

LEMON WHITE WINE VINEGAR DRESSING DRESSING

Juice of 1 lemon
White wine vinegar
Olive oil
Salt and pepper

- In a jar add the juice of a lemon and a Tablespoon or so of white wine vinegar

- Add olive oil to taste, whisking as you go

- Add salt and pepper to taste

Roasted Fingerling Potato Salad with Watercress Horseradish Dressing

Most of our cooking inspiration these days comes from library books. Almost weekly, Jason heads to the library to get a new book or two (or three). This method has allowed us to try so many new styles and recipes without having to commit to a book that might end up having only one or two interesting recipes.

A recent favorite was Earth to Table: Seasonal Recipes from an Organic Farm by Jeff Crump and Bettina Schormann. The book is organized by season and highlights dishes that best encapsulate the spirit of that season which I love.

This recipe was a yummy hit and simple to make. We served it first with a spice rubbed pork tenderloin and made it again to serve with delicious Bobby Flay cheeseburgers. We made a couple of changes, in particular altering how the salad was composed and served. If you can't find fresh horseradish root you could always substitute prepared, and if watercress is nowhere to be found, substitute arugula for a similar, peppery flavor. While the recipe calls for peeling the potatoes, I love living the skin on and everyone agreed this was the way to go with this recipe!

ROASTED FINGERLING POTATO SALAD WITH WATERCRESS HORSERADISH DRESSING

2 lbs fingerling potatoes
3 Tbsp olive oil
1 Tbsp fresh thyme leaves
1 tsp salt
1-2 bunches watercress

DRESSING
1/4 cup olive oil
1/4 cup sour cream
2 Tbsp red wine vinegar
1 Tbsp freshly grated horseradish root
Salt and pepper to taste
lemon

- Preheat the oven to 450

- Toss the potatoes, oil, thyme and salt in a medium bowl

- Spread on a baking dish and roast until very tender, about 30 minutes. Check the potatoes and flip them halfway through the baking, the skins will get a little browned

-  To make the dressing: whisk together the oil, sour cream, vinegar and horseradish. Season to taste with salt and pepper. I ended up adding a little extra horseradish and a dash of lemon juice. Cover and refrigerate while potatoes finish

- Once potatoes are done and have cooled slightly, toss in a large bowl with the watercress

- Serve the salad with the dressing on the side for guests to drizzle themselves

Haricot Verts Salad with Olives in Creme Fraiche Dressing

HARICOT VERTS SALAD WITH OLIVES IN CREME FRAICHE DRESSING  serves 4
from Tyler Florence's book Tyler's Ultimate

1 pound frozen haricot verts (use fresh when in season, use frozen otherwise)
1 cup creme fraiche
Juice of 1 lemon
1/4 cup extra-virgin olive oil
1/4 cup pitted kalamata olives
1/2 tsp dried dill (use fresh when in season)
salt
freshly ground black pepper

--  Bring large pot of salter water to a boil.  Fill a large bowl with ice water.  Add beans to boiling water, 1-2 minutes, until they turn bright green.  Remove and shock in bowl of ice water and then drain well.

--  In a mini-food processor combine the creme fraiche, lemon juice, olive oil, dill, salt and pepper and blend until smooth.

--  In a large serving bowl add the olives to the beans, toss with the dressing and serve with an additional sprinkle of freshly ground black pepper

Roasted Baby Beet and Blood Orange Salad with Champagne Vinaigrette

This recipe is adapted from the Girl & The Fig cookbook.  Jason and I and two good friends had an amazing lunch at the Girl & the Fig while vacationing in Sonoma last February, and the cookbook appeared in my easter basket!

This is a great winter salad, although instead of the watercress it calls for, which we simply couldn't get our hands on, we used arugula, and some gorgeous yellow beets.  It was a lovely start to the meal and Jason plated it beautifully.



ROASTED BABY BEET AND BLOOD ORANGE SALAD WITH CHAMPAGNE VINAIGRETTE

Makes 10 servings

6 large beets
1/4 cup olive oil
1/2 cup champagne vinaigrette
3 blood oranges, segments only (supreme)
8 oz arugula (approximately)
salt and pepper
parmesan, thinly shaved

--Preheat oven to 350

--Place beets on top of tin foil, cover with the olive oil, fold the foil into packets and place on a baking sheet and bake for about 1 hour

--Cool enough to handle, then peel off the skins and slice the beets into thin slices

--Toss the arugula with the champagne vinaigrette

--On the plate, lay down 2-3 overlapping slices of beet with a pinch of salt and pepper

--Lay 3-4 blood orange segments along the top of the plate

--Top the beets with a mound of arugula and garnish with the shaved cheese

Champagne Vinaigrette

We served this vinaigrette with a beet, arugula and blood orange salad.

CHAMPAGNE VINAIGRETTE

2 1/2 Tbsp champagne vinegar
1 tsp minced shallots
1 tsp dijon mustard
2 tsp sugar
5 Tbsp extra virgin olive oil
salt and pepper

--Combine the champagne vinegar, shallots, mustars and sugar in a bowl

--Slowly whisk in the olive oil

--Season with salt and pepper

Tuna Salad with Garbanzo Beans and Vegetables

Variations on this dish are one of my favorite springtime dishes.  All winter the food I eat needs to be warm, but with the warmer weather my body and mind can finally handle some cool salads.  For this recipe I always use my only brand of tuna, Genova.  It's pricey but well worth it.

Dried garbanzo beans, soaked overnight, drained, rinsed and cooked until tender, about 1 1/2 hours (I soaked more than I needed for this dish, and then used leftovers for hummus)
1 3oz can Genova tuna (or other tuna packed in oil)
1 red bell pepper, diced
1-2 stalks celery diced
1-2 radishes diced
1-2 tsp capers
lemon juice
salt and pepper to taste (not much salt since the tuna I use is a little salty)
fresh parsley

Mix in a large bowl and enjoy!
