Champagne Vinaigrette

We served this vinaigrette with a beet, arugula and blood orange salad.


2 1/2 Tbsp champagne vinegar
1 tsp minced shallots
1 tsp dijon mustard
2 tsp sugar
5 Tbsp extra virgin olive oil
salt and pepper

--Combine the champagne vinegar, shallots, mustars and sugar in a bowl

--Slowly whisk in the olive oil

--Season with salt and pepper
